Chef Ole Mouritsen from Denmark will discuss the Science of Sushi.
This is the first of three “Science and Food" public lectures at UCLA which features talks and demonstrations from leading chefs and food scientists from around the world. The public lecture series is presented in conjunction with UCLA life scientist Amy Rowat’s undergraduate course, "Science and Food: The Physical and Molecular Origins of What We Eat," in hopes of introducing food science to the general public.
The public events promote the public’s understanding of science through food, and food through science.
